What pairs better than sun-dried grapes, fine sherry, and oak-barrel-aged Granitbock?

For this limited specialty, our dark granite bock was allowed to rest for over 4,5 years in an American oak barrel that had previously been filled with Pedro Ximénez sherry, provided by the traditional Covijerez cooperative in the heart of Andalusia. The barrel comes directly from the classic Solera and Criadera system of sherry production in Jerez de la Frontera.

Pedro Ximénez Sherry is made from particularly sugar-rich grapes that are dried into raisins in the sun of southern Spain. With about 15% alcohol and its natural residual sweetness, it provides the ideal basis for an exceptional barrel aging.
​
During long storage in the PX barrel, the granite bock develops complex aromas of raisin and dried fig, complemented by caramelized malt notes, fine oak and a subtle, grape-like acidity. It remains dry, velvety, and deep on the palate – like a ripe dessert wine or port, but as a beer.
​
In the glass, the Bock presents itself in a dark chestnut brown with a reddish sheen – bringing a piece of Andalusian sunshine into the glass.
